Ajinomoto® Umami Culinary Challenge Year 7

The 7th year of the Ajinomoto® Umami Culinary Challenge (UCC) proves to be even more exciting as it gathers 55 schools and universities from NCR, Ilocos, Bicol, Central and Southern Luzon and regional winners from Visayas and Mindanao. The nation’s best culinary teams will showcase their culinary prowess on Saturday, January 30, 2016 from 6:00 AM – 6:00 PM at the Philippine Trade and Training Center, Manila.

The Ajinomoto® UCC is an inter-school culinary competition where foodies and culinary enthusiasts meet with a common dedication to unite taste and health in food preparations. UCC is part of Ajinomoto Philippines Corporation’s advocacy to promote the benefit of umami taste in preparing deliciously nourishing recipes. Through its food brand slogan “Eat Well, Live Well.®”, Ajinomoto hopes that future chefs and nutrition professionals will create more deliciously nourishing food for Filipino families to enjoy and live life to the fullest.

The panel of judges is composed of Food and Nutrition luminaries: Chef Gene Gonzales, Chef Sau del Rosario, Chef James Antolin, Chef Colin McKay, Chef Eugene Raymundo, Dr. Celeste Tanchoco, Dr. Imelda Agdeppa, and Dr. Adela Ruiz to name a few. They were invited to provide valuable insights to student-competitors on how to apply culinary skills and nutrition knowledge in the creation of nourishing umami dishes.

Over 300 aspiring chefs will compete in three (3) culinary competition categories: Best Filipino Umami Dish, My Own Umami Creation and Umami Master and other non-culinary categories: the “Aminomazing Showdown” beverage concoction contest and the “My Umami Coach and I” food-styling competition. Finalists from Luzon, Visayas and Mindanao will compete in the National Cooking Showdown.

I have recently just started watching the highly viral and wide-known Yaya Dub and Alden via Youtube. You see, this working mom cannot beat the clock and always misses to watch the noontime hit segment known to everyone as Aldub. I am sure you have also already known that 555 Sardines recently signed up Maine Mendoza aka Yaya Dub as their newest endorser singing to the tune of Sana dalawa ang Puso ko.

The Northern provinces are never behind when it comes to TV trends, in fact, 555 Fried Sardines recently held a cooking showdown that encourages to “Make Your Barangay Proud” in chosen Barangays from Pampanga, Pangasinan and Quezon. Participants featured their entries using 555 Fried Sardines as main ingredient in vying for the top spots per Leg. From the hundreds of entries submitted, Top 10 entries were chosen to participate in the actual demo which was furthered down to the Top 5 per Town who received the honors.

My husband’s favorite is 555’s bottled sardines, his taste buds crave for the Pinoy sardines taste on rainy days, yep, he interestingly uses them as spread for pandesal. 555 Fried sardines has also evolved over time. It is no longer exclusive to our usual mackerel or spicy variants but it now has Tausi, Hot and Spicy, Bistek, and Escabeche. I wouldn’t be surprised if you would go for 555 Sardines on your other sardines-flavored pasta. Ironically, sardines can also be good for your health. Sardines supports your cardiovascular health as it is rich in Omega 3 fatty acids EPA and DHA, which have been researched to lower triglycerides and cholesterol levels. Moreover, sardines also contains Vitamin B12 which can prevent hardening of arteries. Sardines are also rich in Protein which is the basis of muscles and connective tissues. Protein provides us with Amino Acids that acts as antibodies that keep our immune system strong.

Joined Best Food Forward – Rockwell Weekend

Nuffnangers spent a leisurely afternoon over food, food and food. Not new to the food fair scene but this one is quite different. Best Food Forward 2015 is bigger and better than previous years. It ran for two days (Saturday and Sunday) at the Rockwell Tent and my friends and I trooped to Rockwell Tent to sample and have our fill. Browse through this blog post in pictures.

If you are big on dips and salad dressings, Whisk is for you. Personally tried their strawberry flavored dip with their cracker bits and I actually liked it. Best Food Forward, i think, offered more than 5 dip and salad dressing options.

Whisk bestseller is their spinach and artichoke dips. Best kept cold and refrigerated before you used it as dip or before using it as salad dressing.

Chizu is not your usual cheese cupcakes around, these have been baked in brick fire charcoal oven. Just from sampling it, you taste the fresh bread and you know that it is free from your usual cheesecake preservatives.

If you have always liked your Mediterranean dose of food delight, this hummus is for you. Sample it all you like. Despite so many people milling around their booth, didn’t get disappointed when I sampled it.

Tried their small serving of Crunchy Belly the moment we stepped in. However, we were wise enough not to stay too long. May be too delicious you can lose track of how much pork you have already eaten.

So after doing all the walking and completing the rounds in Rockwell Tent, stepped out of the tent and found the perfect meal for lunch. TT served us fresh from the grill pork served with tomatoes, salted egg, atchara. One may also opt to spray vinegar to your food before you have your fill.

Making your sausage picks? Sevilla and Sons takes care of small batch sausages made from the finest pork. It was quite dizzying to sample too many pork options around the tent. It didn’t help that it sat right next to Seacharon and just a stone’s throw away from crispy pata kiosk.
